So if you have ever ventured into any of the ‘vegan’ tags on Instagram you will of course be familiar with the, frankly INCREDIBLE, amazingness and sheer wizardry that is ‘Nicecream’ or ‘Nana Ice Cream’, and if you haven’t then dammit you need to whip out your blender and get making some!
I was super sceptical when I first saw photographs of this stuff, how could it possibly taste or have the smooth, creamy texture of ice cream I thought? Boy was I wrong! Not only does it look, taste and feel like ice cream, but it is super healthy, which just means you can eat twice as much, which I most definitely do!
So how do you make this incredible frozen mountain of yumminess?
Blended frozen bananas. That’s it.
Healthy ice cream is that damn easy! So easy in fact that I have this for breakfast multiple times a week, even during the cold winter months, albeit whilst wrapped in a blanket like a sausage roll, clutching a boiling hot mug of green tea for warm sips between bites, the struggle is real!
The best thing about this stuff is that it is totally, easily customisable to whatever your tastebuds are craving that day. You want strawberry? Whack some strawberries in and there you go, strawberry ice cream, done. Chocolate? Whack a spoonful of cacao powder in that sucker and BAM, perfect frozen chocolatey goodness.
Now that I’ve convinced you to give this stuff a go (don’t lie, you know are tempted!), lets get down to the technical nitty gritty. You are going to need a pretty powerful blender to be able to smush up the frozen bananas into smooth creaminess, and my god is it noisy when you make it! I’m not sure what my neighbours must think, but they must be super curious to know why the small girl living in the flat next door insists on using a pneumatic drill at 7am. I use a Kitchen Aid Diamond Blender and it is fab! Sure it’s no Vitamix, but quite frankly the thought of spending £500 on anything makes me nervous as hell, do you know how many bananas that could buy??! Roughly 700kg in the UK, which would make enough to last a year (who am I kidding that wouldn’t last 2 weeks in my house!). But I digress, any blender will work with a good dose of determination, and a splash of nutmilk to help get things going is always helpful.
Now for the recipe, which is probably all you really came here for, so apologies for the overly enthusiastic introduction! Here goes.
- • 4-5 frozen bananas.
- • 1 cup of frozen blueberries.
- • 1 tsp vanilla bean paste (or extract).
- • ½ tsp of cinnamon.
- Cut bananas into coins and place them in the freezer overnight in an air tight freezer bag or box.
- Place bananas into a blender or food processor and pulse until the bananas is broken up into tiny pieces.You may need to scrape down the sides. Keep doing this until theres a weird, crumby looking mix left.
- Add the blueberries, cinnamon and vanilla bean paste and blend or process until it turns into ice-cream, it should have the texture and consistency of soft-serve ice-cream!
