This is it; the ultimate tropical smoothie. It’s got all the good stuff; coconut water, pineapple chunks, mango, and sweet, deliciously weird lychees. It’s sweet, creamy, but also seriously refreshing and zingy too. This tastes like summer, tropical beaches and turquoise seas in a glass, (or mason jar!)
There is a quirky little coffee shop in Bristol that makes the best smoothies, and my favourite of theirs is a pineapple, mango and lychee smoothie. I wish I could drink it everyday, but it’s really expensive; so when I saw lychees were back in the shops, I jumped at the chance to recreate this recipe at home. I love having smoothies for breakfast in the summer, and this makes the perfect start to your day with it’s uplifting zesty-ness, and it is impossible to have a bad day after drinking this; fact.
The hot new trend this summer seems to be coconut water; it used to just be my slightly eccentric housemate at Uni who would bravely down mug full’s of this stuff after a particularly heavy night, and who would regularly experiment with ice-cream by adding herbs and spices to it; so naturally I was always sceptical of this stuff, but now it is everywhere! And I hate it. There’s something about the taste and texture of it that I just cannot stand, so the only way I am able to drink it is in a smoothie. It’s strange because I am completely in love with every other part of the coconut, and every other coconut product; but not this. Surely I cannot be alone?! Luckily for me coconut water makes smoothies super refreshing without any of the taste or texture!
The health benefits of coconut water are well documented, and one of the things I like the most is that it helps to moisturise the skin from within, and trust me, it works. I have always been one of those people who is a complete sucker for beauty products; if it promises me eternal youth, dewey skin and an angelic complexion, I am in. But since eating a diet high in raw foods, I have switched to using far fewer products overall, and the ones I do use are more natural, because it’s important to limit the number of chemicals you put on your skin, as your skin is a giant organ that needs to be nourished too. I absolutely swear by coconut oil; I wash my face with it using a circular brush, moisturise with it, condition my hair with it; and both my skin and hair have never looked healthier, especially supplemented by adding coconut water to my smoothies. It’s also really good at toning your face if you dab a small amount on after washing your face.
Mangos are also loaded with lovely antioxidants, which helps to delay the onset of ageing, and are packed full of vitamin A, which is a vital nutrient for maintaining healthy skin. In fact, it’s been proven that regular consumption of mangos will give you beautifully clear, smooth skin. Paired with coconut water, this is a smoothie that is sure to having you glowing from the inside out!
- • 1 small/medium pineapple
- • 1 ripe mango
- • 8-9 lychees
- • 1 cup of coconut water
- • 3-4 large ice cubes
- Prepare your fruit; cut the pineapple into chunks, and remove the core, then remove the skin and seeds of the lychees. Remove the skin and stone from the mango.
- Place your pineapple, lychees, mango, coconut water and ice-cubes into a blender and blend until smooth and creamy.
- Serve with a squeeze of lime for extra freshness.
